Growing up my mother and I would put a small sweet potato at the top of a mason jar and patiently watch the plant sprout roots and branches. As far as I remember, that is where are gardening experiment ended. Last spring, I did the same thing, but actually planted the sweet potato after it started to root.

One of the easiest plant on the earth to grow. Sweet potato is a vine related to the Morning Glory which is either a weed or exotic plant depending on your inclination. And like a weed it grew. The vine covered an area was about five times greater than its fiber bag.

There was so much growth that I expected the plant had little energy left for creating the tubers. That was not the case. The half of a small sweet potato, soil, sun, water and time created 6lbs and 7oz of tubers.
